Healthy Recipes


-Mixed Berry Fool with Natural Yoghurt


What you need:
500ml low fat natural yoghurt
6oz blueberries, washed
6oz raspberries, washed
6oz strawberries, washed and topped
1 lemon
1 teaspoon of icing sugar
Mint leaves


What you do:
(1) Blend all berries and yoghurt together in a food processor. (2)Add juice of lemon and icing sugar. (3)Divide the mixture between four small bowls and place in fridge for 1 hour or until set. (4) Garnish with mint.

- Marinated Chicken Salad

Serves 4

What you need:
4 chicken fillets
Mixture of salad leaves
Olive oil
Salt and freshly ground pepper.

Marinade:
2-3 green chillies, deseeded
3-4 cloves garlic, halved
5cm fresh ginger, chopped
7oz block coconut, chopped
Juice and rind of 2 limes
3 tablespoons light soy sauce
2 teaspoons castor sugar
Large bunch coriander leaves
300-450ml hot water.

What you do:
(1)Blend all marinade ingredients into a liquidiser until almost smooth (keeping roughly 5 tablespoons for salad dressing). (2)Season chicken breast with a little salt and black pepper. (3)Cover chicken with the remaining marinade ingredients and let it soak through for at least one hour before cooking. (4)Place chicken on a baking tray in a preheated oven for 20 minutes at 200°C/400°/Gas Mark 7. (5)Toss prepared, washed leaves in a little olive oil and the rest of the marinade. (6)Slice chicken breast thinly and mix with salad leaves. (7)Garnish with fresh coriander leaves.

- Carrot and Coriander Soup

A healthy soup , that everyone enjoys.
Carrots are rich in carotene (vitamin A) and have important antioxidant benefits that help protect against heart disease and they help us to see in the dark!

Preparation: 10 minutes
Cooking: 30 minutes
Serves: 4

What you need:

8 large carrots, chopped
1 onion, chopped
1 medium potato, peeled and chopped Freezing: yes(10 days approx)
10-12 coriander seeds, crushed
500ml/12 fl oz vegetable stock
4 sprays frying oil spray
Freshly chopped parsley for garnish
A little salt and freshly ground black pepper
What you do:

(1)Heat a large saucepan, spray 4 times with oil spray and add the onion and coriander seeds. (2)Season with a little salt and freshly ground black pepper, cover and cook for about 3-4 minutes. (3)Add vegetable stock, carrots and potatoes, cover and bring to the boil. (4)Let it simmer for 20 minutes. (5)Liquidise the ingredients, then return to the saucepan and heat through. (6)Serve with freshly chopped parsley.

Whether your trying to lose all that christmas weight or get healthy and in shape for this summer, heres some strategies to make you feel fresh this year:

NOTE: The average recommended daily allowance is 2,000 calories, but this depends on your sex, weight, height, age and physical activity.


-1. Drink a lot of water to flush out kidney's bladder and system.
-2. Eat a wide variety of foods, but stay closer to fruit, vegetables , whole grain and don't be afraid to try new things.
-3.Eat enough calories but not to much and balance it between your intake and expenditure. Do not eat more food than your body needs.
-4. Limit your salt and sugar intake.
-5. Use a smaller plate ehen eating , as it will look like you have a lot to eat.
